I do love a recipe that you can make and eat at anytime of the day. These cheesecake toasts are never inappropriate. There is toast and fruit, which is perfect for breakfast. Cream cheese and bread, that just spells out sandwich, perfect for lunch and also the perfect quick and easy dessert. Cheesecake toast you tick all the boxes and that’s what I love.
I wish I could take credit for this idea, but sadly I can’t. It’s all down to that clever husband of mine. Don’t tell him I said that! He suggested it and the next day I had to make them. The great thing is you could top them with anything you wanted. You can make it as healthy or as lavish as you want. I settled for low fat cream cheese, strawberries and just a drizzle of honey to sweeten it all up. As for the bread use your favourite. I went for seeded.
I also have to explain where toasts come from too. It should really just be called cheesecake toast but after I had given birth the lovely midwife brought me some toast. When she came back in to check I was all ok, she asked if I enjoyed my toasts and it’s just stuck with us! (That’s probably not funny to anyone but us, oh how I love an “in joke”.)
Cheesecake Toasts
– Makes 4 –
4 slices of bread
8 strawberries
50g soft cheese
runny honey
Toast your bread.
Spread with cream cheese.
Cut your strawberries into eighths and place on top of the toast.
Drizzle with honey.
(That’s really not a recipe is it! But I promise you it’s bloody delicious.)
