
I wanted to bake leaf cookies, well maybe leaf-shaped cookies, I’m not sure a leaf made from cookies would actually taste nice, for a while. I made them back in 2019 and haven’t done it again since. Then I had a genius idea. Cookie Ice Cream Sandwich. With allllllll the cinnamon. Oh yes. So that’s what I did. And oh my goodness. It’s the perfect Autumn dessert!! Cinnamon Leaf Ice Cream Cookie Sandwich

Ingredients
For the cookies:
- 75 g caster sugar
- 2 tsp ground cinnamon
- 150 g baking butter
- 225 plain flour
For the cinnamon sugar:
- 2 tsp ground cinnamon
- 2 tbsp caster sugar
For assembling:
- 1 tsp maple syrup
- vanilla ice cream
Instructions
- Preheat the oven to 170°C and line 2 baking trays with baking paper.
- Combine the flour, sugar and cinnamon in a bowl. Rub in the butter to make breadcrumbs and then keep bringing the mixture together until you have a dough. This can take a little time but it will work!
- Roll out the dough to 2cm thick. Use a leaf cutter or do as I did and cut around a print out. And score the leaf patterns onto the top.
- Sprinkle the top of the cookie with the cinnamon sugar.
- Bake for 10 minutes or until golden brown. Keep an eye on them as you don't want them to burn.
- Leave to cool for a while, you don't want your ice cream to melt completely. Then assemble your cookie.
- Place one cookie on the bottom. Spread a fine layer of maple syrup onto the cookie. Add as much ice cream as you like.
- Top with another cookie.And enjoy!!!
